Sautéed Shrimp Over Zucchini Noodles

Easily substitute the zucchini noodles with Spaghetti Squash, Konjac Noodles, or any other low carb alternative!

Oh this is a good one! Once you get the basics down, you can swap out your "noodles" or your protein. You can even serve the "zoodles" on its own or with a grilled protein!


Crazy, but I actually prefer the "zoodles" over pasta now! I get my veggies in and can have a little extra without going off plan. –Melissa M.

Sautéed Shrimp over Zucchini Noodles (makes 3 servings)


Ingredients for Shrimp:


  • 15-20 shrimp (5 medium sized shrimp = 3oz)

  • 1T of olive oil (Spray mister or Pam is great as well)

  • 1/2 diced onion

  • 2 cloves of garlic

  • 1 can of diced tomatoes

  • Basil (optional)

  • Red Pepper flakes (optional)

  • 3 tsp of Parmesan Cheese (optional)

  • Salt/Pepper to taste


Directions:


  1. In a sauté pan, heat olive oil/Pam and sauté shrimp until just pink. Remove and set aside in a bowl.

  2. To the pan, add onions and garlic. Cook until translucent.

  3. Add tomatoes and cook for 10 minutes, stirring often.

  4. Add the spiraled zucchini (or pre-prepared zucchini noodles). Cook for 1-2 min.

  5. Add basil, red pepper flakes, salt, pepper, and parmesan cheese. Stir.

  6. Add back the shrimp. Cook for an additional 2-3 minutes, stirring often.

  7. Portion into 3 servings. Enjoy 1 and store the remaining 2 in containers for the next meal!
