Bruschetta

This classic Italian appetizer can be a fantastic topper to any protein - plus another way to get your veggies in!!

Serving size: 1 cup - Counts for 1 Veggie, 1 Fat


I've always had this on toast, but wow, it's even better on grilled chicken!! -Kali L.

Bruschetta (makes 2 servings)


Ingredients:


  • 1 Large Tomato or 2 Medium Tomatoes (seeded and diced)

  • 1/2 Red Onion (diced)

  • Garlic (chopped/crushed)

  • Fresh Basil (chopped/julienned)

  • 2T Olive Oil

  • 2T Balsalmic Vinegar (optional - if added, count as 1 flex food)


Directions:

  1. Combine all ingredients

  2. Salt to taste
