This classic Italian appetizer can be a fantastic topper to any protein - plus another way to get your veggies in!!

Serving size: 1 cup - Counts for 1 Veggie, 1 Fat

Bruschetta (makes 2 servings)
Ingredients:
1 Large Tomato or 2 Medium Tomatoes (seeded and diced)
1/2 Red Onion (diced)
Garlic (chopped/crushed)
Fresh Basil (chopped/julienned)
2T Olive Oil
2T Balsalmic Vinegar (optional - if added, count as 1 flex food)
Directions:
Combine all ingredients
Salt to taste
