Roasted Spaghetti Squash

Spaghetti squash is a terrific base to any protein and counts as your veggies!

Spaghetti squash is a fantastic alternative to pasta and takes on the flavor of whatever you are adding to the dish. It will quickly become a staple any time of the day
Once you get the hang of cutting open the squash, the rest is so easy and you can prep this ahead of time! –Jennifer S.
Roasted Spaghetti Squash (makes 3-4 servings)
Ingredients:
1 large Spaghetti Squash
Olive Oil (Spray mister or Pam is great as well)
Salt
Pepper
Garlic Powder (optional)
Directions:
Preheat oven to 400 degrees.
Cut squash lengthwise. Scoop and discard the seeds.
Spray with Pam or olive oil
Season to taste. Salt and pepper work great but you can also add any other seasonings you wish.
Flip squash cut-side down onto sheet pan.
Roast for 45 to 50 minutes for a larger squash (adjust the cook time for smaller squash)
With a fork, scrape the squash into strands resembling spaghetti.
Serve with your favorite protein!
